I would recommend B. Carmon Hardy's documentary history, Doing the Works of Abraham: Mormon Polygamy Its Origin, Practice, and Demise, vol 9 in the Arthur Clark series Kingdom in the West. It includes documents from a variety of perspectives and should serve your students well. You could also use selections from Annie Clark Tanner's Mormon Mother. There's also published Mormon women's diaries: Smart, ed., Mormon Midwife: The 1846-1888 Diaries of Patty Bartlett Sessions; Hatch and Compton, eds., A Widow's Tale: The 1884-1896 Diary of Helen Mar Kimball Whitney. I also like to give students (or have them search for) representative newspaper articles in the Deseret News and Salt Lake Tribune from the 1870s-1880s; digitized and searchable online at http://digitalnewspapers.org/.
