Robert A. Hart, _The Great White Fleet : its voyage around the world, 1907-1909_ (Boston: Little, Brown, 1965) covers on earlier operation (if that's the right word). Stephen Howarth's _To shining sea : a history of the United States navy, 1775-1991_ (NY: Random House, 1991) would give you an overview of the period but IIRC doesn't go in-depth on operations.
